Mock Rice-A-Roni

400°

A “Rice-A-Roni” pilaf may not be gourmet, but it is quick, easy, and tasty. This can be baked for about 40 minutes or stirred up on top of the stove in half that time.

1 tablespoon vegetable oil

1/2 cup chopped onion

11/2 cups Mock Rice-A-Roni Mix (here)

1 teaspoon dried thyme

21/2 cups chicken stock

2 tablespoons GF soy sauce

3 tablespoons slivered almonds (optional)

STOVE-TOP COOKING: In a large skillet, heat the oil. Saute the onion until translucent. Add the Mock Rice-A-Roni Mix and thyme. Stir until the rice is coated. Pour in the chicken stock mixed with the soy sauce. Add the almonds (if used). Bring to boil, reduce heat, cover, and allow to simmer for 20 minutes or until the liquid is absorbed.
